Healthy Coconut Treats Recipe
8 oz. Coconut oil
8 oz. coconut cream concentrate or coconut butter
2 tablespoons vanilla extract (make sure corn syrup is not in the ingredients)
3 to 5 single serving packets of stevia
optional: 1 to 2 tablespoons cocoa powder (requires additional stevia)
optional: add coconut flakes or coconut chips (unsweetened)
optional: add 2 – 3 tablespoons acai, blue berry, raspberry, or other dark fruit powder
The coconut oil and butter must be at room temperature or warmer for effective mixing. Blend the ingredients together with a wire wisk until creamy. Pour the
mixture into candy molds or plastic ice cube trays. Refrigerate for 1 hour. Ring out the trays. Store the treats in the refrigerator. They melt at room
temperature.
